Leeks in vinaigrette

A new veggie to try!


  • Vinaigrette
  • 1 shallot
  • 1 garlic clove
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 tsp whole grain mustard
  • 1 tsp fresh thyme
  • 1/4 tsp sugar
  • 1/4 c olive oil
  • fresh ground black pepper
  • at least 2 large leeks per person


  • Boil a large pot of water.
  • Use only the white and pale green part of the leek.  Trim away tough outer layer.
  • Place the leeks in boiling water for 1-2 minutes.  Remove and drain on paper towels.
  • Combine remaining ingredients for vinaigrette in blender and mix well.
  • Arrange leeks on a platter and pour vinaigrette over top.  Let rest for 10 minutes before serving. Can be served at room temperature.
  • Vinaigrette is awesome on other veggies or salads.
