A new veggie to try!
Ingredients
- Vinaigrette
- 1 shallot
- 1 garlic clove
- 1 tbsp red wine vinegar
- 1 tsp dijon mustard
- 1 tsp whole grain mustard
- 1 tsp fresh thyme
- 1/4 tsp sugar
- 1/4 c olive oil
- fresh ground black pepper
- at least 2 large leeks per person
Directions
- Boil a large pot of water.
- Use only the white and pale green part of the leek. Trim away tough outer layer.
- Place the leeks in boiling water for 1-2 minutes. Remove and drain on paper towels.
- Combine remaining ingredients for vinaigrette in blender and mix well.
- Arrange leeks on a platter and pour vinaigrette over top. Let rest for 10 minutes before serving. Can be served at room temperature.
- Vinaigrette is awesome on other veggies or salads.
