{"id":1000,"date":"2020-10-29T21:36:30","date_gmt":"2020-10-30T03:36:30","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1000"},"modified":"2020-10-29T21:38:49","modified_gmt":"2020-10-30T03:38:49","slug":"shepherds-pie","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2020\/10\/29\/shepherds-pie\/","title":{"rendered":"Shepherd&#8217;s Pie"},"content":{"rendered":"<p>Such a delicious and comforting classic<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>1.5 pounds ground beef or a combination of ground beef and ground lamb<\/li>\n<li>olive oil<\/li>\n<li>1 large carrot, grated<\/li>\n<li>1 large yellow onion, grated<\/li>\n<li>3-4 cloves garlic, grated (or minced)<\/li>\n<li>1 cup frozen peas<\/li>\n<li>Large sprig of fresh rosemary and thyme, chopped<\/li>\n<li>1 tbsp Worcestershire sauce<\/li>\n<li>2 tbsp tomato puree<\/li>\n<li>1\/2 cup red wine<\/li>\n<li>1\/2 cup chicken stock<\/li>\n<li>6 golden potatoes, peeled and cut into cubes<\/li>\n<li>1\/4 cup butter<\/li>\n<li>1\/4 cup milk<\/li>\n<li>2 tbsp either cream cheese or sour cream (optional)<\/li>\n<li>Parmesan cheese, grated<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Preheat oven to 350 F<\/li>\n<li>Heat olive oil in a large saucepan over medium to medium high heat. Add ground beef and cook until crispy brown. Season with salt and pepper.<\/li>\n<li>Add in grated onion and carrot and mix thoroughly. Add in garlic and cook for a few minutes.<\/li>\n<li>Start the mashed potatoes by bringing a pot of water with potatoes in it to a boil. Cook until potatoes are just tender enough to stick a fork through (about 20 minutes).<\/li>\n<li>Add in Worcestershire and tomato puree into the beef mixture and stir until completely combined.<\/li>\n<li>Add in red wine and fresh rosemary and thyme. Let simmer for a few minutes until the alcohol in the wine is cooked off.<\/li>\n<li>Add in chicken stock and stir to combine. Add in frozen peas and turn off the heat. Let mixture stand while you make the mashed potatoes.<\/li>\n<li>Drain the cooked potatoes. Mash the potatoes back in the pot with a heavy hand of salt and pepper added in. Add in butter and milk and mash together until fluffy. Stir in a healthy amount of grated parmesan cheese. Stir in cream cheese or sour cream for extra flavour.<\/li>\n<li>Line a baking dish with the beef mixture in a thick layer. Top with mashed potatoes and fork the top. Top with more parmesan cheese.<\/li>\n<li>Bake together for 18-20 minutes.
