{"id":1004,"date":"2020-10-29T22:03:05","date_gmt":"2020-10-30T04:03:05","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1004"},"modified":"2024-09-07T09:44:12","modified_gmt":"2024-09-07T15:44:12","slug":"french-onion-soup","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2020\/10\/29\/french-onion-soup\/","title":{"rendered":"French Onion Soup"},"content":{"rendered":"<p>Just like grandma used to make!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>A sh*tload of yellow onions (about 2 bags), sliced thinly<\/li>\n<li>8 cups beef broth<\/li>\n<li>A few glugs of sherry or apple flavoured brandy<\/li>\n<li>2 tbsp flour<\/li>\n<li>2 bay leaves<\/li>\n<li>Bunch of thyme<\/li>\n<li>Olive oil<\/li>\n<li>1\/4 cup butter<\/li>\n<li>Cheese topping options: Emmental, gruyere, provolone, parmesan<\/li>\n<li>Day old crostini, sliced and baked until golden brown<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>In the largest pot you own, cover the bottom in olive oil and heat over medium-low heat.<\/li>\n<li>Add in sliced onions until pot is almost full. Stir occasionally as onions slowly brown until a sort of jam is formed &#8211; make sure the heat isn&#8217;t too hot or else they will burn. Add in salt and pepper as the onions cook down.<\/li>\n<li>When onions start to brown, add in the butter and stir together.<\/li>\n<li>When onions are a deep brown colour, add in the alcohol to deglaze the bottom of the pot. Cook down.<\/li>\n<li>Sprinkle in the flour to add some structure. Pour in the beef stock and add in bay leaves and sprigs of thyme. Add in extra water if needed. Bring to a boil, reduce and simmer for about 30 minutes.<\/li>\n<li>Add soup into an oven safe bowl, leaving a few inches at the top. Place the crostini on top of the soup, cover generously with cheese, and broil until cheese is brown and bubbly.
