{"id":1082,"date":"2021-02-15T15:01:37","date_gmt":"2021-02-15T22:01:37","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1082"},"modified":"2021-02-15T15:01:42","modified_gmt":"2021-02-15T22:01:42","slug":"cauliflower-mac-n-cheese","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2021\/02\/15\/cauliflower-mac-n-cheese\/","title":{"rendered":"Cauliflower Mac &#8216;n Cheese"},"content":{"rendered":"<p>A little different then using pasta but just as yummy and comforting.\u00a0 Makes you feel slightly better about the calories&#8230;lol!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>CAULIFLOWER MIX:<\/li>\n<li>1 small head of cauliflower, cut into bite size pieces<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>1 tsp garlic power<\/li>\n<li>1\/4 tsp black pepper or Club House Spicy Pepper Medley<\/li>\n<li>CHEESE SAUCE:<\/li>\n<li>3 tbsp butter<\/li>\n<li>3 tbsp flour<\/li>\n<li>1 1\/4 c milk<\/li>\n<li>4 oz sharp white cheddar cheese block, grated<\/li>\n<li>8 oz Monterey Jack cheese block, grated<\/li>\n<li>1\/2 tsp garlic powder (I prefer fresh garlic, minced!)<\/li>\n<li>1\/4 tsp black pepper<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>TOPPING (optional)<\/li>\n<li>1 1\/2 c shredded mozzarella cheese<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Heat oven to 375F<\/li>\n<li>Grease a 2 qt casserole dish<\/li>\n<li>In a large saucepan, saute&#8217; the cauliflower with olive oil and spices.\u00a0 Cook until barely softened.\u00a0 Should still be a little crunchy.<\/li>\n<li>Remove cauliflower from pan and place in bottom of casserole dish.<\/li>\n<li>In the same pan, make the cheese sauce by melting the butter.<\/li>\n<li>Whisk in the flour.<\/li>\n<li>Add the milk in small amounts and whisk until smooth before adding next portion of milk.<\/li>\n<li>Once all the milk is incorporated, start adding the cheese in small amounts.<\/li>\n<li>Whisk until cheese is melted before adding more cheese.<\/li>\n<li>Season with salt, garlic powder and pepper.<\/li>\n<li>Pour sauce over cauliflower and stir slightly to make sure cauliflower is well covered.<\/li>\n<li>Add cheese topping if using.\u00a0 I find it rich enough without adding the topping.<\/li>\n<li>Bake for about 15 min until sauce starts to bubble.\u00a0 You can broil for 1-2 minutes to brown the top but watch it carefully so it doesn&#8217;t burn.<\/li>\n<li>Enjoy!<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Thanks to willcookforsmiles.com<\/p>\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>A little different then using pasta but just as yummy and comforting.\u00a0 Makes you feel slightly better about the calories&#8230;lol!
