Use fresh herbs if possible.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>FILLING:<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>1 large butternut squash, seeded, peeled, cut into 3\/4&#8243; cubes<\/li>\n<li>2 cloves of garlic, minced<\/li>\n<li>1\/2 tsp salt (or more to taste)<\/li>\n<li>1\/4 tsp black pepper<\/li>\n<li>1 &#8211; 2 tbsp fresh thyme or rosemary<\/li>\n<li>2 c kale, or brocolini, or cauliflower, or any other root vegetable, roughly chopped<\/li>\n<li>1\/2 c yellow onion, diced<\/li>\n<li>1 c veggie broth<\/li>\n<li>TOPPING:<\/li>\n<li>1 c panko breadcrumbs or crushed cracker crumbs<\/li>\n<li>1 tbsp fresh thyme, rosemary, or sage<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/4 tsp ground nutmeg<\/li>\n<li>1\/4 c butter, melted<\/li>\n<li>1 c freshly grated parmesan&nbsp; cheese<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Heat oven to 375<\/li>\n<li>Grease bottom of shallow 13&#8243; x 9&#8243; pan.&nbsp; I use olive oil.<\/li>\n<li>Heat a frying pan and add olive oil.&nbsp; When heated add the garlic and onion.&nbsp; Saute for 1-2 minutes.<\/li>\n<li>Add the squash.&nbsp; Saute&#8217; until squash starts to brown.<\/li>\n<li>Pour the mixture into the greased pan and spread evently.<\/li>\n<li>Spread the remaining veggies on top.<\/li>\n<li>Add the seasonings to the veggie broth and pour evenly over top of vegetables.<\/li>\n<li>Cover in foil and bake for 30 minutes.<\/li>\n<li>Uncover and check squash for doneness.&nbsp; A fork should pierce the squash easily.<\/li>\n<li>Combine all topping ingredients in a small bowl and mix well.<\/li>\n<li>Spread evenly on top of squash.<\/li>\n<li>Return dish to the oven and bake uncovered for another 20 minutes.<\/li>\n<li>Topping should be slightly brown and crispy.<\/li>\n<li>Remove from oven and serve warm.<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Thanks to <a href=\"https:\/\/mywebsitehere.com\">https:\/\/wellplated<\/a><\/p>\n<p><a href=\"https:\/\/mywebsitehere.com\">.com<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m always looking for new side dish recipes.&nbsp; This one is very flexible and delish!
