{"id":1278,"date":"2021-07-30T11:57:37","date_gmt":"2021-07-30T17:57:37","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1278"},"modified":"2021-07-30T11:58:13","modified_gmt":"2021-07-30T17:58:13","slug":"almond-zucchini-cake-2","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2021\/07\/30\/almond-zucchini-cake-2\/","title":{"rendered":"Almond Zucchini Cake"},"content":{"rendered":"<p>This cake can be frozen and glazed after thawing.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>CAKE:<\/li>\n<li>4 eggs<\/li>\n<li>3 c sugar<\/li>\n<li>1 c veggie oil<\/li>\n<li>1 tsp almond extract<\/li>\n<li>3 c flour<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1 tsp salt<\/li>\n<li>3 c finely grated zucchini (if zucchini skin is thick, remove before grating, otherwise leave skin on)<\/li>\n<li>1 c ground almonds<\/li>\n<li>GLAZE:<\/li>\n<li>1 1\/2 c icing sugar<\/li>\n<li>2 tbsp milk<\/li>\n<li>1 tsp almond extract<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Heat oven to 350F<\/li>\n<li>Grease and flour 10&#8243; tube pan<\/li>\n<li>In a mixer, beat the eggs until thick and light colored<\/li>\n<li>Gradually add the sugar 1\/4 c at a time beating well after each addition.<\/li>\n<li>Stir in oil and almond extract<\/li>\n<li>Blend in dry ingredients until smooth<\/li>\n<li>Stir in zucchini and ground almonds<\/li>\n<li>Pour batter into pan and bake for 1 hr.&nbsp; Check doneness with skewer.
