{"id":1334,"date":"2021-11-07T10:11:17","date_gmt":"2021-11-07T17:11:17","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1334"},"modified":"2021-11-07T10:22:38","modified_gmt":"2021-11-07T17:22:38","slug":"christmas-fruitcake","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2021\/11\/07\/christmas-fruitcake\/","title":{"rendered":"Christmas Fruitcake"},"content":{"rendered":"<p>I have never had anyone not fall in love with this cake.\u00a0 I have modified it over the years but it originally came from Chatelaine Magazine.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>2 c (2 containers) candied red cherries<\/li>\n<li>1 c (1 container) candied green cherries<\/li>\n<li>1 c (1 container) glace mixed chopped fruit \/ pineapple<\/li>\n<li>1\/2 c amaretto or cointreau or grand marnier (whichever you have around!)<\/li>\n<li>1\/2 c soft butter<\/li>\n<li>1\/2 c soft shortening<\/li>\n<li>1 tsp almond flavouring<\/li>\n<li>3\/4 c sugar<\/li>\n<li>4 eggs, room temperature<\/li>\n<li>3 c flour, separated see below<\/li>\n<li>1 c liquor (whatever you used above is best)<\/li>\n<li>1\/4 c milk<\/li>\n<li>1 package purchased marzipan or almond paste<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Put all the candied fruit in a large bowl, reserving some for decorating the top of the cake.\u00a0 I like the mixed chopped fruit best for this. Mix in 1\/2 c of liquor.\u00a0 Leave on the counter for several days, turning it once or twice a day so fruit absorbs the liquor.\u00a0 It will still be wet near the bottom of the bowl.<\/li>\n<li>When ready to bake, heat oven to 275F<\/li>\n<li>Line 2 loaf pans with parchment paper.\u00a0 I use silicone pans so I don&#8217;t have to do this step.<\/li>\n<li>With a mixer, cream the butter and shortening together until light and fluffy.<\/li>\n<li>Add almond flavouring.<\/li>\n<li>Gradually beat in sugar, 1\/4 c at a time&#8230;.total 3\/4 cup.<\/li>\n<li>Gradually beat in eggs one at a time, beating well after each addition.<\/li>\n<li>Add 3\/4 c flour and mix well.<\/li>\n<li>Add 1\/2 c liquor and mix well.<\/li>\n<li>Add another 3\/4 c flour and mix well.<\/li>\n<li>Add remaining 1\/2 c of liquor and mix well.<\/li>\n<li>Add another 1 c of flour and mix well.<\/li>\n<li>Add 1\/4 c milk and mix well.\u00a0 Set batter aside.<\/li>\n<li>Add 1\/2 c flour to fruit mixture and mix well.\u00a0 Flour need not be fully absorbed.<\/li>\n<li>Pour fruit mixture into batter and fold together till fruit is evenly distributed.<\/li>\n<li>Pour batter into loaf pans, smoothing batter out to corners, and making shallow depresssion down the middle with spatula.<\/li>\n<li>Bake for 90 min. in middle of oven. Cake should test done but don&#8217;t overbake as cake will be dry.<\/li>\n<li>Remove pans from oven and cool on a rack for 30 minutes.\u00a0 The marzipan or almond paste needs to be placed on loaves while they are warm&#8230;not hot&#8230;so that the icing adheres to the cake.<\/li>\n<li>After 30 minutes carefully remove loaves from pans.\u00a0 They are heavy so they need to be well supported. I place loaves on clean parchment.<\/li>\n<li>Roll out almond paste on a little bit of icing sugar so it doesn&#8217;t stick to surface.
