{"id":1361,"date":"2021-12-15T10:56:01","date_gmt":"2021-12-15T17:56:01","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1361"},"modified":"2025-03-07T15:10:18","modified_gmt":"2025-03-07T22:10:18","slug":"tomato-sauce","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2021\/12\/15\/tomato-sauce\/","title":{"rendered":"Tomato Sauce"},"content":{"rendered":"<p>Home made is awesome!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>22 lbs of tomatoes, romas are a good choice.\u00a0 I grow Mountain Gems which are excellent tasting and fewer seeds.\u00a0 I freeze them first (3 extra large zip lock bags of frozen tomatoes makes one pot full), bring them out to thaw for about an 1 1\/2 hrs before ready to make sauce. When they are still mostly frozen I cut out the stems and any bad parts, and quartered them, and put them in the pot. A full pot of frozen tomatoes make about 6-8 quarts of sauce.<\/li>\n<li>1 medium chopped yellow onion, or less<\/li>\n<li>2 tbsp minced onion or onion flakes<\/li>\n<li>1 or 2 tins of tomatoe paste<\/li>\n<li>6 &#8211; 8 cloves of garlic, minced<\/li>\n<li>1\/4 c olive oil<\/li>\n<li>1 tbsp dried oregano<\/li>\n<li>3 dried bay leaves<\/li>\n<li>1\/2 tbsp ground black pepper, I use Spicy Pepper Medley<\/li>\n<li>4 &#8211; 6 tbsp brown cane sugar (dark brown sugar)<\/li>\n<li>1 tsp red pepper flakes<\/li>\n<li>1 tsp sea salt<\/li>\n<li>1 tsp celery salt<\/li>\n<li>2 tsp worstershire sauce<\/li>\n<li>1 -2 tsp baking powder, optional.\u00a0 I use it to reduce acidity for sensitive tummies.<\/li>\n<li>bottled lemon juice, 2 tbsp per jar<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Fill canning pot with water, enough to cover jars plus about 1 &#8220;.\u00a0 Fill with empty jars and put on high heat.\u00a0 Jars need a rolling boil for 20 minutes before filling them.<\/li>\n<li>Fill a large stock pot with partially frozen tomatoes.\u00a0 They will boil down to about 1\/2 of the pot.\u00a0 Set the pot on medium heat.<\/li>\n<li>Add the seasonings except for bay leaves, baking soda, onion, and garlic.<\/li>\n<li>Bring tomatoes almost to a boil.\u00a0 Remove from heat and use immersion blender to create smooth sauce. Skins usually disappear but if not, remove any that are left.<\/li>\n<li>Add onion, garlic , and bay leaves to stock pot.<\/li>\n<li>Add baking soda if using. Simmer tomato mixture for about 20 minutes on medium heat, stirring occasionally<\/li>\n<li>Remove bay leaves.<\/li>\n<li>Taste adjust salt or sugar as necessary.<\/li>\n<li>When ready to fill jars, put snap lids in measuring cup and add boiling water to soften rubber, usually 3-5 minutes.<\/li>\n<li>Lift and drain single jar.\u00a0 Put 2 tbsp of lemon juice in bottom of hot jar.<\/li>\n<li>Fill with hot tomatoe sauce to within 1\/2&#8243; of top.\u00a0 Clean top edge with paper towel or clean dish cloth.<\/li>\n<li>Use magnetic tool to lift warmed snap lid (do not touch edges or bottom), place on hot jar and screw ring down lightly.<\/li>\n<li>Continue filling hot jars.\u00a0 When complete, use jar lifter to return the filled jars to the canner.<\/li>\n<li>Ensure there is at least 1&#8243; of water above lids.\u00a0 Bring canner to a vigorous boil.<\/li>\n<li>Boil the jars for 35 minutes for pints and 40 minutes for quarts.<\/li>\n<li>Lift processed jars and set on clean tea towel on counter.\u00a0 Do not move for 24 hours.<\/li>\n<li>Check that lids have sealed by pressing down on center of lid.\u00a0 Lids should NOT pop up.<\/li>\n<li>If jar did not seal, place in fridge and use within a few days.<\/li>\n<li>Store processed jars in cool dark place.<\/li>\n<\/ul>\n<p><strong>PIZZA SAUCE:<\/strong><\/p>\n<ul>\n<li>I usually take the bottom 25% of the sauce in the pot, add a long squeeze or 2 of Balsamic Glaze (or a few tbsps of balsamic vinegar), pour into 250 ml jars (no lemon juice), and process in the canner for 25 minutes on boil.<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Thanks to <a href=\"https:\/\/mywebsitehere.com\">https:\/\/mywebsitehere.com<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Home made is awesome!
