{"id":1443,"date":"2022-03-13T09:25:54","date_gmt":"2022-03-13T15:25:54","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1443"},"modified":"2022-03-13T09:27:18","modified_gmt":"2022-03-13T15:27:18","slug":"turmeric-ginger-kabocha-squash-soup","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2022\/03\/13\/turmeric-ginger-kabocha-squash-soup\/","title":{"rendered":"Turmeric Ginger Kabocha Squash Soup"},"content":{"rendered":"<p>A wonderful soup!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>1 medium size kabocha squash, seeded, skinned, cut into large cubes<\/li>\n<li>1 large shallot, chopped<\/li>\n<li>1 tsp or more turmeric powder<\/li>\n<li>1 tsp or more cinnamon<\/li>\n<li>1 tsp or more coarse salt<\/li>\n<li>1 tbsp or more fresh ginger<\/li>\n<li>1 can full fat coconut milk<\/li>\n<li>4 c or more Vegetable stock<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Use a sharp knife to cut the squash in half.&nbsp; Avoid cutting through the center stem section, cut to the side of it.&nbsp; Do this slowly! Kabocha squash is tough!&nbsp; Remove seeds. Cut the squash into sections, about 1 1\/2-2&#8243; wide.&nbsp; Cut off the skin of each section and cut in large cubes.<\/li>\n<li>In a large soup pot, heat a couple tbsp of oil.<\/li>\n<li>Add the shallots and season with salt and pepper.<\/li>\n<li>Add the squash and saute&#8217; for a few minutes.<\/li>\n<li>Add enough stock to cover the squash.<\/li>\n<li>Add the seasonings.<\/li>\n<li>Cook over medium heat until the squash is soft, about 30-40 minutes. Taste mixture and adjust seasonings.<\/li>\n<li>Use an immersion blender to reduce the mixture to creamy smooth consistency.<\/li>\n<li>Add the coconut milk and blend into the soup.
