{"id":1651,"date":"2024-06-28T16:19:23","date_gmt":"2024-06-28T22:19:23","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1651"},"modified":"2026-07-01T13:10:41","modified_gmt":"2026-07-01T19:10:41","slug":"chicken-burgers","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2024\/06\/28\/chicken-burgers\/","title":{"rendered":"Chicken Burgers"},"content":{"rendered":"<p>Very tasty!\u00a0 I make them oblong to fit into flour tortillas.\u00a0 Serve with spicy pepper hummus, sliced cherry tomatoes, shredded lettuce, tzatiki, shredded cheese,\u00a0 and salsa.\u00a0 Roll them up and enjoy!<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/cookingfever.us\/wp-content\/uploads\/Chicken-Zucchini-and-Fresh-Corn-Burgers-2-819x1024.jpg\" alt=\"Chicken, Zucchini and Fresh Corn Burgers Recipe\" \/><\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>1 lb. ground chicken or turkey (not previously frozen)<\/li>\n<li>1\/2 c panko bread crumbs or cracker crumbs (or more as needed)<\/li>\n<li>1\/2 c or more grated zucchini or squash, water squeezed out<\/li>\n<li>1 lg egg<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>1\/2 can corn nibblets, drained OR 1\/2 can white kidney beans, drained<\/li>\n<li>3 green onions sliced thinly<\/li>\n<li>1\/2 c bell pepper finely chopped<\/li>\n<li>2 tsp ground cumin<\/li>\n<li>2 tsp ground coriander<\/li>\n<li>1 tsp kosher salt<\/li>\n<li>1tsp ground pepper or pepper medley<\/li>\n<li>1 tsp minced onion<\/li>\n<li>1 tsp onion powder<\/li>\n<li>1 tsp celery salt<\/li>\n<li><\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Preheat oven to 400F<\/li>\n<li>In a large bowl combine all ingredients and mix well.\u00a0 If the mixture seems too wet, add more panko crumbs. Form into patties.\u00a0 Put parchment paper between the patties. Put the patties into a zip lock and freeze them.\u00a0 They are best cooked from frozen as they are fragile.<\/li>\n<li>Heat a large frying pan to medium heat.\u00a0 Add oil to cover the bottom of the pan.<\/li>\n<li>Sear the patties for about 5 minutes on each side.
