{"id":1702,"date":"2024-09-29T14:37:52","date_gmt":"2024-09-29T20:37:52","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1702"},"modified":"2024-09-29T14:41:13","modified_gmt":"2024-09-29T20:41:13","slug":"lemon-pesto-pasta","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2024\/09\/29\/lemon-pesto-pasta\/","title":{"rendered":"Lemon Pesto Pasta"},"content":{"rendered":"<p>Fresh!\u00a0 Makes enough for 2 people.\u00a0 You can add cooked chicken or shrimp if desired.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>2 lemons<\/li>\n<li>1 c blanched almonds (whole, slivered, sliced)<\/li>\n<li>1\/3 c parmessan cheese<\/li>\n<li>olive oil<\/li>\n<li>salt \/ pepper \/ sugar<\/li>\n<li>spaghetti for 2 people<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Put a large pot of water on high heat and bring to a boil.\u00a0 Spaghetti will be cooked in this pot.<\/li>\n<li>Shave rind off of 1 lemon.\u00a0 Add it to large pot of boiling water along with 1\/2 tsp of salt and 1\/2 tsp sugar. Let the lemon rind boil about 2 minutes.<\/li>\n<li>REMOVE THE LEMON RIND and add the spaghetti and cook to desired tenderness.<\/li>\n<li>While the spaghetti is cooking, put the cooked lemon rind, almonds, and cheese in a food processor or blender.\u00a0 Add 1\/2 tsp salt and 1\/2 tsp sugar.<\/li>\n<li>Set machine to blend and drizzle in olive oil until you have a thick paste.<\/li>\n<li>Drain the spaghetti reserving the liquid.<\/li>\n<li>Add the pesto to the spaghetti and 1\/2 c of the reserved liquid.\u00a0 Mix together, adding more liquid until you have a sauce that coats the spaghetti.<\/li>\n<li>Add the chicken or shrimp if using and squeeze the lemon juice into the spaghetti and mix well.\u00a0 Serve with additional parmessan cheese if desired.<\/li>\n<li>Enjoy<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Thanks to <a href=\"https:\/\/mywebsitehere.com\">https:\/\/mywebsitehere.com<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fresh!\u00a0 Makes enough for 2 people.\u00a0 You can add cooked chicken or shrimp if desired.
