{"id":1720,"date":"2024-09-30T14:42:13","date_gmt":"2024-09-30T20:42:13","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1720"},"modified":"2026-01-06T16:56:06","modified_gmt":"2026-01-06T23:56:06","slug":"lemongrass-beef-vermicelli-bowl","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2024\/09\/30\/lemongrass-beef-vermicelli-bowl\/","title":{"rendered":"Lemongrass Beef Vermicelli Bowl"},"content":{"rendered":"<p>A super quick and delicious meal with homemade fish sauce!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<p>For the lemongrass beef bowl:<\/p>\n<ul>\n<li>1 stalk lemongrass, chopped<\/li>\n<li>Stir fry beef, or steak cut into thin strips for frying<\/li>\n<li>1 &#8211; 2 tbsp cornstarch<\/li>\n<li>1 package vermicelli noodles<\/li>\n<li>1-2 Carrots, sliced into matchsticks (or shaved)<\/li>\n<li>1\/4 &#8211; 1\/2 a cucumber, sliced into matchsticks<\/li>\n<li>Handful of peanuts, roughly chopped<\/li>\n<li>Sliced green onions<\/li>\n<li>A few leaves of mint and basil for garnish<\/li>\n<\/ul>\n<p>For the sauce:<\/p>\n<ul>\n<li>1\/4 cup white sugar<\/li>\n<li>1\/4 cup fish sauce<\/li>\n<li>3\/4 cups boiled water<\/li>\n<li>4 garlic cloves<\/li>\n<li>1\/2 a lime, juiced<\/li>\n<li>0.5 tbsp white vinegar<\/li>\n<li>1\/4 tbsp chili garlic paste (optional)<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>For the homemade sauce, combine all the ingredients into a large bowl and mix until the sugar is dissolved. Makes a lot, but is good for 3-4 months in a sealed container in the fridge. Can be used for any noodle bowls or as a dipping sauce!<\/li>\n<li>Coat the beef strips in cornstarch, salt, and pepper. Set aside.<\/li>\n<li>Bring a pot of water to a boil for the vermicelli noodles. At the same time, heat oil in a saucepan for the beef.<\/li>\n<li>Add your beef strips and lemongrass into your pan and cook until browned.<\/li>\n<li>Add your vermicelli noodles to the boiling water and cook according to the package (about 5-10 minutes). Drain.<\/li>\n<li>Place some noodles into a bowl and top with the veggies, saut\u00e9ed beef, mint, basil, chopped peanuts, and green onions.
