{"id":1729,"date":"2024-09-30T15:26:39","date_gmt":"2024-09-30T21:26:39","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1729"},"modified":"2024-09-30T15:26:41","modified_gmt":"2024-09-30T21:26:41","slug":"lebanese-chicken-and-rice","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2024\/09\/30\/lebanese-chicken-and-rice\/","title":{"rendered":"Lebanese Chicken and Rice"},"content":{"rendered":"<p>A low effort, super delicious chicken and rice recipe with a Lebanese twist!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>3 chicken breast or 8-10 chicken thighs or a combination of both<\/li>\n<li>1 tsp chicken or vegetable stock concentrate (or 1 cube of dry)<\/li>\n<li>1 small yellow onion or 1\/2 large white onion<\/li>\n<li>2 garlic cloves, chopped or minced<\/li>\n<li>1 cinnamon stick<\/li>\n<li>1 bay leaf<\/li>\n<li>2 cups basmati rice<\/li>\n<li>1\/2 cup Italian vermicelli &#8211; wheat, not the Asian rice vermicelli<\/li>\n<li>1 tsp cinnamon powder<\/li>\n<li>2 tsp Lebanese 7 spice:\n<ul>\n<li>1 tbsp all spice<\/li>\n<li>1 tbsp cinnamon<\/li>\n<li>1 tbsp coriander<\/li>\n<li>1\/2 tsp pepper<\/li>\n<li>1\/2 tsp cloves<\/li>\n<li>1\/2 tsp cumin<\/li>\n<li>1\/2 tsp nutmeg<\/li>\n<\/ul>\n<\/li>\n<li>Toasted pine nuts or toasted slivered almonds for garnish<\/li>\n<li>Chopped parsley for garnish<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Place the chicken, onion, garlic cinnamon stick, and bay leaf into a slow cooker or pot. Cover with water, adding the chicken or vegetable stock for additional flavour.<\/li>\n<li>Once the chicken is fully cooked (3-4 hours), take it out of the stock and shred with a fork. Keep the stock for cooking the rice.<\/li>\n<li>In your rice pot, heat a bit of oil over medium high heat. Add the wheat vermicelli noodles and fry them until golden brown.<\/li>\n<li>Add the rice to the same pot with 4 cups of the chicken stock from earlier (add water if there\u2019s not enough stock). Add in your spices &#8211; salt, pepper, cinnamon, and 7 spice. Bring to a boil, reduce the heat to low, and cover for 20 minutes.<\/li>\n<li>Once the rice is cooked, combine it with the shredded chicken, sprinkling in some more 7 spice for additional flavour. Top with toasted pine nuts or almonds and parsley.
