{"id":1782,"date":"2025-01-13T17:06:18","date_gmt":"2025-01-14T00:06:18","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1782"},"modified":"2025-01-13T17:08:41","modified_gmt":"2025-01-14T00:08:41","slug":"basic-vinaigrette-plus-variations","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2025\/01\/13\/basic-vinaigrette-plus-variations\/","title":{"rendered":"Basic Vinaigrette (Plus Variations!)"},"content":{"rendered":"<p>A simple and delicious Vinaigrette recipe<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>\u00bd cup extra-virgin olive oil<\/li>\n<li>3 tablespoons vinegar of choice (balsamic vinegar, red wine vinegar, white wine vinegar)<\/li>\n<li>1 tablespoon Dijon mustard<\/li>\n<li>1 tablespoon maple syrup or honey (Creamed honey from Creston is delicious)<\/li>\n<li>2 medium cloves garlic, pressed or minced<\/li>\n<li>\u00bc teaspoon fine sea salt, to taste<\/li>\n<li>\u00bc teaspoon ground black pepper, to taste<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>In a liquid measuring cup or bowl, combine all of the ingredients. Stir well with a small whisk or a fork until the ingredients are completely mixed together.<\/li>\n<li>Taste, and adjust as necessary. If the mixture is too acidic, thin it out with a bit more olive oil or balance the flavors with a little more maple syrup or honey. If the mixture is a little blah, add another pinch or two of salt. If it doesn\u2019t have enough zing, add vinegar by the teaspoon.<\/li>\n<li>Serve immediately, or cover and refrigerate for future use. Homemade vinaigrette keeps well for 7 to 10 days. If your vinaigrette solidifies somewhat in the fridge, don\u2019t worry about it\u2014real olive oil tends to do that. Simply let it rest at room temperature for 5 to 10 minutes or microwave very briefly (about 20 seconds) to liquify the olive oil again. Whisk to blend and serve.<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Notes<\/p>\n<ul>\n<li><strong>Balsamic vinegar<\/strong>: Makes a bold, slightly sweet dressing that is wonderful on green salads with fruit, such as apples, strawberries or peaches.<\/li>\n<li><strong>Red wine vinegar<\/strong>: Packs a punch and works well with other bold flavors and bright veggies, like tomatoes, bell peppers, cucumber, cabbage and more (think Greek salads).<\/li>\n<li><strong>White wine vinegar<\/strong>: This is a more mellow vinegar and it\u2019s especially nice with more delicate flavors like cucumber and sweet corn. It\u2019s lovely on just about every green salad out there.<\/li>\n<li><strong>Greek\/Italian variation<\/strong>: Use red wine vinegar.
