{"id":1816,"date":"2025-05-21T18:36:10","date_gmt":"2025-05-22T00:36:10","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1816"},"modified":"2025-05-21T18:38:14","modified_gmt":"2025-05-22T00:38:14","slug":"carrot-cake-muffins","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2025\/05\/21\/carrot-cake-muffins\/","title":{"rendered":"Carrot Cake Muffins"},"content":{"rendered":"<p>Carrot cake in small form.\u00a0 Can make with or without cream cheese icing.\u00a0 Great snack and travel well!!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>1 1\/2 c flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1\/2 tsp cinnamon<\/li>\n<li>1\/4 tsp nutmeg<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 veggie oil or melted butter<\/li>\n<li>1\/2 c brown sugar<\/li>\n<li>1\/4 c granulated sugar<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 1\/2 &#8211; 2 c finely grated carrots<\/li>\n<li>1\/2 c chopped pecans<\/li>\n<li>1\/4 c+ of raisins<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Heat oven to 350 degrees<\/li>\n<li>Put liners in muffin pan.\u00a0 Makes 1 dozen.
