I\u00a0 have also used cooked salmon or chicken in the fritters<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/div>\n\n<ul>\n<li>YUM YOGURT DIP<\/li>\n<li>Greek yogurt<\/li>\n<li>Any or all of the following to taste:\n<ul>\n<li>parsley, mint, dill, garlic<\/li>\n<\/ul>\n<\/li>\n<li>a bit of lemon juice<\/li>\n<li>a bit of honey<\/li>\n<li>a bit of olive oil<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>FRITTERS<\/p>\n<p>3 c of shredded zucchini or squash, SQUEEZE as much water our as possible<\/p>\n<p>1\/3 c chopped onion<\/p>\n<p>2 garlic cloves minced<\/p>\n<p>3 tbsp of fresh parsley and \/ or dill and \/ or mint<\/p>\n<p>salt \/ pepper<\/p>\n<p>1 large egg, whisked<\/p>\n<p>1\/3 c fine cornmeal + 1 tbsp corn starch ( or substitute 1\/2 c flour)<\/p>\n<p>1 tsp baking powder<\/p>\n<p>1 egg<\/p>\n<p>olive oil for frying<\/p>\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Mix all ingredients for yogurt dip and refridgerate until ready to use<\/li>\n<li>Mix DRY zucchini or squash with onion and seasonings<\/li>\n<li>Add cornmeal + corn starch and mix until veggies are coated<\/li>\n<li>Mix in the egg until all ingredients combined<\/li>\n<li>Heat olive oil in non-stick frying pan to medium temperature.\u00a0 Drop mixture by tablespoon into hot oil but don&#8217;t crowd them. Fry fritters (in batches) on each side until golden brown&#8230;.about 3 min per side.
