{"id":1894,"date":"2026-09-12T09:39:57","date_gmt":"2026-09-12T15:39:57","guid":{"rendered":"https:\/\/olivereats.ca\/?p=1894"},"modified":"2026-09-12T09:43:14","modified_gmt":"2026-09-12T15:43:14","slug":"gochujang-chicken-curry","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2026\/09\/12\/gochujang-chicken-curry\/","title":{"rendered":"Gochujang Chicken Curry"},"content":{"rendered":"<p>Super easy and delicious weeknight meal!!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>6-8 chicken thighs<\/li>\n<li>2 cups rice (or even noodles would work!)<\/li>\n<li>1 tbsp paprika<\/li>\n<li>1 tbsp ginger powder<\/li>\n<li>1\/2 tbsp garlic salt<\/li>\n<li>Pinch of cayenne for extra spice (optional)<\/li>\n<li>1 can coconut milk<\/li>\n<li>1\/2 red onion, diced<\/li>\n<li>3 garlic cloves, diced<\/li>\n<li>1 tbsp tomato paste<\/li>\n<li>1 tbsp gochujang paste<\/li>\n<li>Large bunch of spinach (or any other vegetable you think would work)<\/li>\n<li>2 lime leaves<\/li>\n<li>Lime wedges and cilantro as toppings<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Cover the chicken thighs with your powdered spices, salt, and pepper and set aside.<\/li>\n<li>Wash your rice then combine it in a pot with 4 cups of water and some salt. Bring to a boil over high heat, turn to low, cover and cook for 25 minutes.<\/li>\n<li>Heat a pan with oil on medium high and fry your chicken until a crispy skin forms. Remove from the pan and set aside &#8211; it\u2019s ok if the chicken isn\u2019t fully cooked as we\u2019ll be adding it back to the pan later.<\/li>\n<li>Add the onion to the pan and cook for a few minutes. Add in the tomato paste and gochujang paste and cook for 2 minutes until a jammy texture forms. Add in your garlic.<\/li>\n<li>Pour in the entire can of coconut milk and lift all the good bits off the bottom of the pan. Season with salt and pepper.<\/li>\n<li>Add in the lime leaves and place the chicken back in.
