{"id":444,"date":"2016-11-29T21:39:15","date_gmt":"2016-11-30T04:39:15","guid":{"rendered":"http:\/\/olivereats.ca\/?p=444"},"modified":"2016-11-29T22:03:12","modified_gmt":"2016-11-30T05:03:12","slug":"cauliflower-puree-with-veggies-2","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2016\/11\/29\/cauliflower-puree-with-veggies-2\/","title":{"rendered":"Cauliflower Pur\u00e9e with Veggies"},"content":{"rendered":"<p>10 servings<\/p>\n<p>Cook 15 &#8211; 20 mins at 350F<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">Carrots, peeled and sliced, enough to cover bottom of casserole<\/li>\n<li class=\"ingredient\">Kale, copped<\/li>\n<li class=\"ingredient\">Monterey Jack cheese, thinly sliced or shredded<\/li>\n<li class=\"ingredient\">Squash &#8211; spaghetti or butter nut<\/li>\n<li class=\"ingredient\">Prosciutto, 2 slices chopped<\/li>\n<li class=\"ingredient\">One head of cauliflower<\/li>\n<li class=\"ingredient\">1\/3 &#8211; 1\/2 cup butter<\/li>\n<li class=\"ingredient\">1\/4 &#8211; 1\/2 cup flour<\/li>\n<li class=\"ingredient\">Milk, 1-2 cups<\/li>\n<li class=\"ingredient\">Seasonings &#8211; celery salt, minced onion, pepper medley, salt, pepper, garlic powder<\/li>\n<\/ul>\n<p>Topping:<\/p>\n<ul>\n<li>Cherry tomatoes and chopped green onion<\/li>\n<\/ul>\n<p>OR<\/p>\n<ul>\n<li>Crackers and melted butter (I like Brettons Garden Vegetable best!)<\/li>\n<\/ul>\n<p>OR<\/p>\n<ul>\n<li>Grated cheddar cheese<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<ol class=\"instructions\">\n<li class=\"instruction\">Boil cut carrots until just barely soft.<\/li>\n<li class=\"instruction\">Drain and put in bottom of large flat bottom casserole dish.<\/li>\n<li class=\"instruction\">Add some salt and pepper.<\/li>\n<li class=\"instruction\">Top with kale.<\/li>\n<li class=\"instruction\">Top with cheese sliced or grated.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<ol class=\"instructions\">\n<li class=\"instruction\">Cut squash in 1\/2 lengthwise. Remove seeds.<\/li>\n<li class=\"instruction\">Place upside down on plate and microwave until done (8 &#8211; 10 mins).<\/li>\n<li class=\"instruction\">Cut into cubes or spoonfuls (remove rind).<\/li>\n<li class=\"instruction\">Layer on top of cheese.<\/li>\n<li class=\"instruction\">Top with prosciutto.<\/li>\n<li class=\"instruction\">Sprinkle a small amount of minced onion and celery salt.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<ol class=\"instructions\">\n<li class=\"instruction\">Cut cauliflower into florets and boil until soft.
