{"id":448,"date":"2016-11-29T22:21:38","date_gmt":"2016-11-30T05:21:38","guid":{"rendered":"http:\/\/olivereats.ca\/?p=448"},"modified":"2016-12-04T19:53:17","modified_gmt":"2016-12-05T02:53:17","slug":"cranberry-and-pecan-quinoa-pilaf","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2016\/11\/29\/cranberry-and-pecan-quinoa-pilaf\/","title":{"rendered":"Cranberry and Pecan Quinoa Pilaf"},"content":{"rendered":"<p>Cook for 1\/2 hr at 350F<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">1 butternut squash<\/li>\n<li class=\"ingredient\">2 tbsp olive oil<\/li>\n<li class=\"ingredient\">1 cup white quinoa<\/li>\n<li class=\"ingredient\">Zest and juice of 1\/2 a lemon<\/li>\n<li class=\"ingredient\">1\/2 cup of frozen cranberries<\/li>\n<li class=\"ingredient\">1\/2 cup of chopped roasted pecans<\/li>\n<li class=\"ingredient\">1\/4 cup of shelled pistachio nuts<\/li>\n<li class=\"ingredient\">1\/4 cup pumpkin seeds<\/li>\n<li class=\"ingredient\">1 tbsp chopped parsley<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<ol class=\"instructions\">\n<li class=\"instruction\">Preheat the oven to 350F<\/li>\n<li class=\"instruction\">Peel the squash and cut into 3\/4&#8243; cubes.<\/li>\n<li class=\"instruction\">Toss with olive oil, sea salt, pepper, and spread on a baking sheet.<\/li>\n<li class=\"instruction\">Roast for 20 &#8211; 25 min stirring occasionally until tender.<\/li>\n<li class=\"instruction\">May be made ahead and left at room temperature.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<ol>\n<li>Bring a large pot of water to boil and add quinoa.
