{"id":553,"date":"2017-01-05T10:22:54","date_gmt":"2017-01-05T17:22:54","guid":{"rendered":"http:\/\/olivereats.ca\/?p=553"},"modified":"2017-01-05T10:22:54","modified_gmt":"2017-01-05T17:22:54","slug":"chicken-tagine-with-apricots","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2017\/01\/05\/chicken-tagine-with-apricots\/","title":{"rendered":"Chicken Tagine with Apricots"},"content":{"rendered":"<p>A cold evening one pot wonder!\u00a0 Serve with rice or quinoa.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">2 tbsp ground cumin<\/li>\n<li class=\"ingredient\">1 tbsp ground ginger<\/li>\n<li class=\"ingredient\">1 tbsp ground coriander<\/li>\n<li class=\"ingredient\">1 tbsp ground cinnamon<\/li>\n<li class=\"ingredient\">1\/2 tbsp kosher salt<\/li>\n<li class=\"ingredient\">8 boneless, skinless chicken thighs trimmed and cut into 2&#8243; pieces<\/li>\n<li class=\"ingredient\">2 tbsp olive oil<\/li>\n<li class=\"ingredient\">2 c chopped onion<\/li>\n<li class=\"ingredient\">1 &#8211; 28 oz can diced tomatoes<\/li>\n<li class=\"ingredient\">2 cups cherry tomatoes<\/li>\n<li class=\"ingredient\">3 c dried apricots, halved<\/li>\n<li class=\"ingredient\">2 c or more of chicken stock<\/li>\n<li class=\"ingredient\">parsley for garnish<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<ol class=\"instructions\">\n<li class=\"instruction\">Mix the cumin, ginger, coriander, cinnamon and salt together in a small bowl.<\/li>\n<li class=\"instruction\">Coat the chicken pieces with the mixture.<\/li>\n<li class=\"instruction\">In a large soup pot, heat the oil over medium high.<\/li>\n<li class=\"instruction\">Add the chicken in small batches and cook until browned, about 2 min per side.<\/li>\n<li class=\"instruction\">Set the batches aside on a plate.<\/li>\n<li class=\"instruction\">Add the onions to the pot along with 2 tbsp of water.<\/li>\n<li class=\"instruction\">Cook stirring often, until the onions are soft, about 5 min.<\/li>\n<li class=\"instruction\">Return the chicken to the pot and add the remaining ingredients.<\/li>\n<li class=\"instruction\">Bring to a boil.
