{"id":557,"date":"2017-01-06T14:35:55","date_gmt":"2017-01-06T21:35:55","guid":{"rendered":"http:\/\/olivereats.ca\/?p=557"},"modified":"2017-04-15T20:08:30","modified_gmt":"2017-04-16T02:08:30","slug":"cauliflower-roasted-garlic-soup","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2017\/01\/06\/cauliflower-roasted-garlic-soup\/","title":{"rendered":"Cauliflower Roasted Garlic Soup"},"content":{"rendered":"<p>Wonderful soup&#8230;good for the soul!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">2 large head of garlic<\/li>\n<li class=\"ingredient\">2 tsp of olive oil<\/li>\n<li class=\"ingredient\">3 tbsp butter<\/li>\n<li class=\"ingredient\">1 c yellow onion, chopped<\/li>\n<li class=\"ingredient\">1\/4 c sherry<\/li>\n<li class=\"ingredient\">4 &#8211; 5 c chicken broth<\/li>\n<li class=\"ingredient\">1 head of cauliflower, cut into small florets<\/li>\n<li class=\"ingredient\">salt and pepper to taste<\/li>\n<li class=\"ingredient\">3 tbsp heavy cream<\/li>\n<li class=\"ingredient\">chopped chives for garnish<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<ol class=\"instructions\">\n<li class=\"instruction\">Preheat oven to 400.<\/li>\n<li class=\"instruction\">Cut off the tops of the garlic heads.\u00a0 Drizzle with olive oil. Wrap loosely in foil.\u00a0 Roast until tender, approx 40 &#8211; 45 min.<\/li>\n<li class=\"instruction\">Take out of oven and let cool enough to touch.\u00a0 Squeeze out garlic into tin foil.<\/li>\n<li class=\"instruction\">In a large soup pot, melt butter over medium high heat.\u00a0 Add the onion and saute&#8217; until soft, approx 5 minutes.<\/li>\n<li class=\"instruction\">Add roasted garlic to soup pot.\u00a0 Using a wooden spoon, mash garlic into the onions.\u00a0 Cook until mixture is bubbly and starts to caramelize, about 3 minutes.<\/li>\n<li class=\"instruction\">Add the sherry and bring to a boil, stir to loosen brown bits.\u00a0 Let boil for 2 minutes.<\/li>\n<li class=\"instruction\">Add the chicken broth and bring to a boil.<\/li>\n<li class=\"instruction\">Add the cauliflower florets and reduce the heat to medium low.<\/li>\n<li class=\"instruction\">Simmer uncovered until cauliflower is very tender, 20 &#8211; 25 minutes.<\/li>\n<li class=\"instruction\">Remove from heat and cool slightly.<\/li>\n<li class=\"instruction\">Using an immersion blender, puree&#8217; the mixture in the soup pot.<\/li>\n<li class=\"instruction\">Check consistency of soup.\u00a0 If necessary add more broth.\u00a0 Salt and pepper to taste.<\/li>\n<li class=\"instruction\">Add cream and return the soup to the stove.\u00a0 Bring mixture just to a boil.
