Oil<\/li>\n<li class=\"ingredient\">2 Chicken breasts<\/li>\n<li class=\"ingredient\">2 Cloves Garlic<\/li>\n<li class=\"ingredient\">1 Jalape\u00f1o<\/li>\n<li class=\"ingredient\">1 Cup Quinoa (uncooked)<\/li>\n<li class=\"ingredient\">1 Cup Vegetable broth<\/li>\n<li class=\"ingredient\">1 (15oz) can of black beans<\/li>\n<li class=\"ingredient\">1 (15oz) can of fire-roasted diced tomatoes<\/li>\n<li class=\"ingredient\">1 Cup of Corn<\/li>\n<li class=\"ingredient\">1 tsp chilli powder<\/li>\n<li class=\"ingredient\">1\/2 tsp cumin<\/li>\n<li class=\"ingredient\">Salt to taste<\/li>\n<li class=\"ingredient\">Pepper to taste<\/li>\n<li class=\"ingredient\">1 Avocado<\/li>\n<li class=\"ingredient\">Juice of 1 Lime<\/li>\n<li class=\"ingredient\">2 Tbsp chopped fresh cilantro leaves<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<ol class=\"instructions\">\n<li class=\"instruction\">Heat olive oil in a large skillet over medium high heat<\/li>\n<li class=\"instruction\">Dice chicken breasts and cook thoroughly<\/li>\n<li class=\"instruction\">Add salt and pepper to taste<\/li>\n<li class=\"instruction\">Add crushed garlic and diced\u00a0jalape\u00f1o pepper (leave the<strong>\u00a0<\/strong>jalape\u00f1o seeds in for extra spice)<\/li>\n<li class=\"instruction\">Stir in quinoa, vegetable broth, beans, tomatoes, corn, chilli powder, and cumin, season with salt and pepper to taste<\/li>\n<li class=\"instruction\">Cover and simmer until quinoa is cooked through, roughly 30 minutes<\/li>\n<li class=\"instruction\">Stir in cilantro and lime juice.<\/li>\n<li class=\"instruction\">Garnish with avocado and extra cilantro<\/li>\n<li
