{"id":604,"date":"2017-06-11T14:02:38","date_gmt":"2017-06-11T20:02:38","guid":{"rendered":"http:\/\/olivereats.ca\/?p=604"},"modified":"2017-06-11T14:10:20","modified_gmt":"2017-06-11T20:10:20","slug":"ginger-beef-lettuce-wraps","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2017\/06\/11\/ginger-beef-lettuce-wraps\/","title":{"rendered":"Ginger Beef Lettuce Wraps"},"content":{"rendered":"<p>Serves two with leftover red onions<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<p>INGREDIENTS For the pickled red onions:<\/p>\n<ul>\n<li class=\"ingredient\">1 cup unseasoned rice vinegar<\/li>\n<li class=\"ingredient\">1 small red onion, thinly sliced<\/li>\n<\/ul>\n<p>INGREDIENTS For the beef lettuce cups:<\/p>\n<ul>\n<li class=\"ingredient\">2 tsp olive oil<\/li>\n<li class=\"ingredient\">4 cloves garlic, crushed<\/li>\n<li class=\"ingredient\">1 tbsp minced ginger<\/li>\n<li class=\"ingredient\">Kosher salt and freshly ground pepper<\/li>\n<li class=\"ingredient\">8 oz ground beef, lean<\/li>\n<li class=\"ingredient\">1 tbsp fish sauce<\/li>\n<li class=\"ingredient\">1 tbsp red onion pickling liquid (or unseasoned rice vinegar)<\/li>\n<li class=\"ingredient\">1\/3 cup pickled red onion (half of the above recipe)<\/li>\n<li class=\"ingredient\">1\/2 a large English cucumber<\/li>\n<li class=\"ingredient\">1\/4 cup fresh parsley leaves, chopped<\/li>\n<li class=\"ingredient\">1\/4 cup fresh mint leaves, roughly chopped (optional)<\/li>\n<li class=\"ingredient\">8-10 medium bibb lettuce leaves, washed and dried<\/li>\n<li class=\"ingredient\">2 tbsp crushed peanuts (optional)<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<p>INSTRUCTIONS For the pickled red onions:<\/p>\n<ol>\n<li>Bring the rice vinegar to a boil in a small pot<\/li>\n<li>Remove the pot from the heat and add the red onions<\/li>\n<li>Let the onion sit in the liquid for at least 30 minutes<\/li>\n<li>You&#8217;ll use half the red onions in this recipe<\/li>\n<li>Let the liquid and the remaining onions cool completely before storing (with all the liquid) in an airtight container in the fridge<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>INSTRUCTIONS For the beef lettuce wraps:<\/p>\n<ol>\n<li>Heat the olive oil in a large skillet over medium heat<\/li>\n<li>Add the garlic and ginger, season with salt and pepper, and cook, stirring often, until everything is fragrant and the garlic is starting to turn golden brown, about a minute<\/li>\n<li>Add the beef, season with salt and pepper, and cook stirring often, until the beef is cooked through and broken up into small pieces<\/li>\n<li>Add the fish sauce, pickling liquid, and pickled red onions and stir to combine<\/li>\n<li>Remove the skillet from the heat and add the cucumber, parsley, and mint<\/li>\n<li>Arrange the bibb lettuce leaves on two plates. Spoon a little of the beef mixture into the centre of each leaf, then garnish with the crushed peanuts<\/li>\n<\/ol>\n<p><\/div>\n<br \/>\n<!--more--><br \/>\nEnjoy as lettuce wraps or wrapped in rice paper.
