{"id":673,"date":"2017-12-24T09:35:25","date_gmt":"2017-12-24T16:35:25","guid":{"rendered":"http:\/\/olivereats.ca\/?p=673"},"modified":"2017-12-24T09:35:25","modified_gmt":"2017-12-24T16:35:25","slug":"crepes","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2017\/12\/24\/crepes\/","title":{"rendered":"Crepes"},"content":{"rendered":"<p>Mom (Pauline) used to make these for special occasions.\u00a0 Experiment with you own fillings!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\"><strong>CREPES (makes about 10 x 7&#8243; crepes) allow 2 per person, at least)<br \/>\n<\/strong><\/li>\n<li class=\"ingredient\">3 tbsp of melted butter<\/li>\n<li>1\/2 c milk<\/li>\n<li>1\/2 c cold water<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 c flour<\/li>\n<li><strong>FILLING<\/strong><\/li>\n<li>2 green onions, chopped fine<\/li>\n<li>1 tbsp finely chopped celery<\/li>\n<li>1 tbsp parsley, chopped<\/li>\n<li>6 brown mushrooms, or 2 medium portobello mushrooms, sliced \/ chopped<\/li>\n<li>1 tbsp butter<\/li>\n<li>2 c shrimp pieces OR cooked chicken<\/li>\n<li>1 c grated sharp cheddar cheese (or other favourite white cheese)<\/li>\n<li><strong>SAUCE<\/strong><\/li>\n<li>3 tbsp butter<\/li>\n<li>4 tbsp flour<\/li>\n<li>1 c milk<\/li>\n<li>salt and pepper to taste<\/li>\n<li>pinch of nutmeg<\/li>\n<li>3 tbsp of grated sharp cheddar cheese<\/li>\n<li>2 tbsp whipping cream<\/li>\n<li>1\/4 c white wine or 1 1\/2 tbsp of sherry<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3>\n<ol class=\"instructions\">\n<li class=\"instruction\"><strong>Crepes<\/strong> can be made ahead and frozen if need be.\u00a0 Put parchment paper in between layers.<\/li>\n<li>Blend all crepe ingredients until smooth.\u00a0 Refrigerate at least 1 hour.<\/li>\n<li>Beat again just before using.\u00a0 Should be the consistency of table cream.<\/li>\n<li>Heat a 6&#8243; non-stick frying pan over medium heat.\u00a0 If not using non-stick then rub surface with butter.<\/li>\n<li>Pour in 1\/4 c of batter or just enough to cover bottom of pan in a relatively thin layer.\u00a0 Swirl batter to cover bottom of pan.<\/li>\n<li>Cook crepe for about 2 minutes.\u00a0 Surface should not be liquid.\u00a0 When crepe is set, flip over to cook the other side&#8230;about 30 seconds.<\/li>\n<li>Slide crepe onto plate with parchment paper.<\/li>\n<li>Crepes can be stacked and frozen till needed. Otherwise store in fridge covered in plastic wrap until ready to use.<\/li>\n<li><strong>Filling<\/strong> can be made ahead and stored in fridge until ready to assemble crepes.<\/li>\n<li>Put all ingredients except shrimp or chicken in a large frying pan and saute&#8217; until veggies are limp.<\/li>\n<li>Add shrimp or chicken, mix and set aside to cool. Filling should be relatively dry.<\/li>\n<li><strong>Sauce<\/strong> can be made ahead a few hours before serving.<\/li>\n<li>Melt butter in sauce pan.<\/li>\n<li>Stir in flour to make a roux.<\/li>\n<li>Gradually add milk stirring well to mix and whisk to smooth.<\/li>\n<li>Add seasonings.\u00a0 Continue cooking until thickened, 5 &#8211; 10 minutes.<\/li>\n<li>Add cream and cheese.\u00a0 Stir to melt.<\/li>\n<li>Add wine to thin out sauce until consistency of thick cream.<\/li>\n<li><strong>Assemble crepes<\/strong> by putting several tablespoons of filling on one end of crepe.\u00a0 Sprinkle a small amount of cheese on top.\u00a0 Roll up crepe and lay in a single layer seam side down in an oven proof serving dish. Dish can be set aside and covered until ready to bake and serve.<\/li>\n<li>When ready to serve, pour sauce over top.<\/li>\n<li>Sprinkle with grated cheese.<\/li>\n<li>Bake at 350 for 30 minutes until sauce is bubbly and slightly browned.
