{"id":844,"date":"2019-03-18T18:40:37","date_gmt":"2019-03-19T00:40:37","guid":{"rendered":"http:\/\/olivereats.ca\/?p=844"},"modified":"2019-03-18T18:42:07","modified_gmt":"2019-03-19T00:42:07","slug":"roasted-veggies-barley-and-bean-salad","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2019\/03\/18\/roasted-veggies-barley-and-bean-salad\/","title":{"rendered":"Roasted Veggies, Barley and Bean Salad"},"content":{"rendered":"<p>Yummy way to have veggies!<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>1\/2 butternut squash, peeled and cut into 1\/2&#8243; cubes<\/li>\n<li>2 red peppers, seeded and cut into 1&#8243; pieces<\/li>\n<li>1 small onion, cut into small wedges<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>1 tsp salt<\/li>\n<li>1\/2 c uncooked pearl barley<\/li>\n<li>1 can cannellini beans or butter beans (soft white beans), drained and rinsed<\/li>\n<li>2 c shredded kale or swiss chard or arugula<\/li>\n<li>2 tbsp balsamic vinegar<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>1 tbsp tamari (gluten free soy sauce) or soy sauce<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Heat oven to 350F<\/li>\n<li>Line a baking sheet with tin foil.\u00a0 Arrange the squash, peppers and onion on the sheet. Drizzle with 2 tbsp of olive oil and salt.<\/li>\n<li>Roast until veggies are tender, 30 &#8211; 40 minutes.<\/li>\n<li>In a medium sauce pan, cover the barley with 3 inches of water.\u00a0 Bring to a boil.\u00a0 Reduce heat to medium and cook uncovered for 25 minutes or until tender.<\/li>\n<li>Drain, rinse with cold water, drain again.<\/li>\n<li>In a large bowl place roasted veggies, barley, and beans.<\/li>\n<li>Mix balsamic vinegar, olive oil and tamari together.\u00a0 Pour over top of veggies and toss lightly.<\/li>\n<li>Enjoy at room temperature.<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Thanks to Style at Home Magazine<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yummy way to have veggies!
