{"id":893,"date":"2020-03-30T14:55:41","date_gmt":"2020-03-30T20:55:41","guid":{"rendered":"http:\/\/olivereats.ca\/?p=893"},"modified":"2020-03-30T14:55:41","modified_gmt":"2020-03-30T20:55:41","slug":"squash-brussel-sprouts-side-dish","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2020\/03\/30\/squash-brussel-sprouts-side-dish\/","title":{"rendered":"Squash \/ Brussel Sprouts Side Dish"},"content":{"rendered":"<p>A little different and easy to make.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>Acorn squash or butternut squash (my preference), enough to serve group<\/li>\n<li>5 &#8211; 10 lg brussel sprouts, bottom trimmed, leaves peeled and saved, core removed<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>4-6 slices of cooked bacon, chopped into small pieces<\/li>\n<li>3 tbsp packed brown sugar<\/li>\n<li>1\/2 tsp cumin<\/li>\n<li>pinch of black pepper<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>Cut squash in half or quarters and remove seeds.<\/li>\n<li>Place cut side down on a plate.\u00a0 Microwave for 10 minutes or until squash can be pierced fairly easily with a fork.<\/li>\n<li>Remove from microwave and cool.<\/li>\n<li>Remove skin from squash and cut into bite-size pieces.<\/li>\n<li>Optional &#8211; Spread a little bit of bacon grease \/ drippings or olive oil on the bottom of a lg oven proof casserole dish. Arrange squash on the bottom of the dish.\u00a0 Squash should be 1 to 2 pieces in depth only.<\/li>\n<li>Put brussel sprout leaves in a bowl and drizzle lightly with olive oil. Gently stir leaves to coat.<\/li>\n<li>Arrange brussel sprout leaves on top of squash. Leaves shouldn&#8217;t totally cover the squash.<\/li>\n<li>Arrange bacon pieces on top of veggies.<\/li>\n<li>Mix brown sugar and cumin together in a small bowl.
