{"id":925,"date":"2020-05-17T12:21:40","date_gmt":"2020-05-17T18:21:40","guid":{"rendered":"http:\/\/olivereats.ca\/?p=925"},"modified":"2020-05-17T12:21:41","modified_gmt":"2020-05-17T18:21:41","slug":"spicy-corn-salsa","status":"publish","type":"post","link":"https:\/\/olivereats.ca\/index.php\/2020\/05\/17\/spicy-corn-salsa\/","title":{"rendered":"Spicy Corn Salsa"},"content":{"rendered":"<p>Had a jar in San Diego so am trying to copy it.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li>3 cans of Peaches and Cream Corn niblets, drained<\/li>\n<li>1 c. of tomatoes peeled and diced, press out juice<\/li>\n<li>1 small jalapeno pepper, seeded and diced fine<\/li>\n<li>1 small poblano pepper (or other type), seeded and dice fine<\/li>\n<li>3\/4 c red or yellow onion, finely diced<\/li>\n<li>2 lg cloves of garlic, minced<\/li>\n<li>2 tbsp fresh cilantro or flat italian parsley, chopped fine<\/li>\n<li>2 tsp (or more) ground cumin<\/li>\n<li>2 tsp salt (I like celery salt)<\/li>\n<li>1\/2 to 3\/4 c sugar (I like mine with less sugar)<\/li>\n<li>1\/2 c white vinegar<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ul>\n<li>This makes 2 &#8211; 3 pint jars so get 3 jars immersed in canner with enough water to cover top of jars plus and 1 inch and bring to boil.<\/li>\n<li>Put all ingredients into large soup pot and bring to boil.\u00a0 Simmer for 15 minutes.<\/li>\n<li>Put jar lids into large measuring cup.\u00a0 Bring kettle of water to boil.\u00a0 Pour boiling water over lids and let sit till needed.<\/li>\n<li>When ingredients are finished simmering, empty jars of boiling water.<\/li>\n<li>Fill hot jars immediately with hot mixture to within 1\/2 inch of top.\u00a0 Gently drop jars on counter to settle contents.\u00a0 Add more hot mixture if necessary.<\/li>\n<li>Wipe top edges of jars, place snap lids on top.\u00a0 Screw on lids until just finger tight&#8230;.don&#8217;t tighten too much.<\/li>\n<li>Set filled jars into canner and ensure they are covered with water plus 1 inch.\u00a0 Boil for 15 &#8211; 20 minutes.<\/li>\n<li>Lift out jars without tipping and set on counter.\u00a0 Leave untouched for 24 hrs.<\/li>\n<li>Check that lids have sealed&#8230;should be concave.<\/li>\n<li>Store in cool dark place.<\/li>\n<li>Enjoy with nachos, chips, or fish dinners.<\/li>\n<\/ul>\n<p><\/div>\n\n<p>Thanks to <a href=\"https:\/\/mywebsitehere.com\">Hoosier Homemade<\/a><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Had a jar in San Diego so am trying to copy it.
