Newfoundland Squares, very similar to Nanaimo Bars, dates back 65 years. The original recipe is not very specific in all cases and this is taken from a well used recipe card.
Ingredients (First Layer)
- 1/2 cup Butter
- 1/2 cup White Sugar
- 4 tbsp. of Coca
- 1 Egg
- 1 tsp. Vanilla Extract
- 2 cups Crushed Graham Wafers
- 1 cup Coconut
- 1/2 cup chopped walnuts
Ingredients (Second Layer)
- 2 cups of Icing Sugar
- 1 pkg. or 4 tbsp. custard powder
- 1/2 cup Butter
- 1 tsp. Milk (Originally worded as a few drops of Milk, adjust and advise)
Ingredients (Third Layer)
- 4 tbsps. of Coco
- 1/4 cup of Butter
- 2 cups Icing Sugar
- 1 tsp. Vanilla Extract (Originally worded as just Vanilla Extract, adjust and advise)
- 1 tsp. Milk (Originally worded as just Milk, adjust and advise)
Directions
- Melt the First Layer Ingredients (1/2 cup Butter, 1/2 cup White Sugar, 4 tbsp. of Coca, 1 Egg, 1 tsp. Vanilla Extract) together over low heat.
- Add 2 cups Crushed Graham Wafers, 1 cup Coconut, 1/2 cup chopped walnuts
- When mixed thoroughly, pack in square pan.
- Mix together the ingredients for the second layer
- Spread the second layer over the first layer in the pan
- Mix together the ingredients for the third layer
- Spread the third layer in the pan & chill.
- Best kept in the Refrigerator.
