Newfoundland Squares

Newfoundland Squares, very similar to Nanaimo Bars, dates back 65 years. The original recipe is not very specific in all cases and this is taken from a well used recipe card.

Ingredients (First Layer)

  • 1/2 cup Butter
  • 1/2 cup White Sugar
  • 4 tbsp. of Coca
  • 1 Egg
  • 1 tsp.  Vanilla Extract
  • 2 cups Crushed Graham Wafers
  • 1 cup Coconut
  • 1/2 cup chopped walnuts

Ingredients (Second Layer)

  • 2 cups of Icing Sugar
  • 1 pkg. or 4 tbsp. custard powder
  • 1/2 cup Butter
  • 1 tsp. Milk (Originally worded as a few drops of Milk, adjust and advise)

Ingredients (Third Layer)

  • 4 tbsps. of Coco
  • 1/4 cup of Butter
  • 2 cups Icing Sugar
  • 1 tsp. Vanilla Extract (Originally worded as just Vanilla Extract, adjust and advise)
  • 1 tsp. Milk (Originally worded as just Milk, adjust and advise)

Directions

  • Melt the First Layer Ingredients (1/2 cup Butter, 1/2 cup White Sugar, 4 tbsp. of Coca, 1 Egg, 1 tsp.  Vanilla Extract) together over low heat.
  • Add 2 cups Crushed Graham Wafers, 1 cup Coconut, 1/2 cup chopped walnuts
  • When mixed thoroughly, pack in square pan.
  • Mix together the ingredients for the second layer 
  • Spread the second layer over the first layer in the pan
  • Mix together the ingredients for the third layer
  • Spread the third layer in the pan & chill.
  • Best kept in the Refrigerator.
