Chicken Shawarma Bowl

A crazy amount of flavour in such an easy recipe!

Ingredients

  • 8 chicken thighs
  • 1 tbsp ground coriander
  • 1 tbsp cardamon
  • 1 tbsp all spice
  • 1 tbsp ground cumin
  • 1 tbsp turmeric
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1/2 tbsp dried oregano
  • 1/2 tbsp dried thyme
  • Juice of 1 lemon
  • 2 cups rice of choice
  • 2 tbsp butter
  • 4 cups chicken stock and water blend
  • 1/2 cup yogurt
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1/4 cup white vinegar
  • Iceberg lettuce, shredded (topping)
  • Roma tomatoes, diced (topping)
  • Olive oil, salt, and pepper

Directions

  • Mix all dried spices and herbs together – this will be your seasoning throughout the recipe
  • Place chicken in a large bowl and drizzle with a healthy amount of olive oil. Season with salt and pepper and about 1 tbsp of your spice mix. Add in half of the lemon juice and mix well so the chicken is well coated. Marinate until you lose patience (anywhere from 30 minutes to 2 hours).
  • Cook chicken in a well oiled pan until they have good colour. Remove.
  • Add your rice to the same pot with the oil and flavour on the bottom of the pan. Let the rice toast for a few minutes while adding 1-2 tbsp of the spice mix. Add your stock/water and bring up to a boil. Once boiling, turn the heat down to a simmer, cover, and let rice cook for 15 minutes.
  • Mix the yogurt, sour cream, and mayo together. Add 1 tbsp of your spice mix along with the other half of the lemon juice and white vinegar. Season with salt and mix until combined.
  • Shred your lettuce and chop your tomatoes and chicken.
  • Once the rice is cooked, plate a healthy portion onto your plate. Add the chopped chicken, shredded lettuce, and diced tomatoes. Top with delicious white sauce and enjoy!
