Lemon Pesto Pasta

Fresh!  Makes enough for 2 people.  You can add cooked chicken or shrimp if desired.

Ingredients

  • 2 lemons
  • 1 c blanched almonds (whole, slivered, sliced)
  • 1/3 c parmessan cheese
  • olive oil
  • salt / pepper / sugar
  • spaghetti for 2 people

Directions

  • Put a large pot of water on high heat and bring to a boil.  Spaghetti will be cooked in this pot.
  • Shave rind off of 1 lemon.  Add it to large pot of boiling water along with 1/2 tsp of salt and 1/2 tsp sugar. Let the lemon rind boil about 2 minutes.
  • REMOVE THE LEMON RIND and add the spaghetti and cook to desired tenderness.
  • While the spaghetti is cooking, put the cooked lemon rind, almonds, and cheese in a food processor or blender.  Add 1/2 tsp salt and 1/2 tsp sugar.
  • Set machine to blend and drizzle in olive oil until you have a thick paste.
  • Drain the spaghetti reserving the liquid.
  • Add the pesto to the spaghetti and 1/2 c of the reserved liquid.  Mix together, adding more liquid until you have a sauce that coats the spaghetti.
  • Add the chicken or shrimp if using and squeeze the lemon juice into the spaghetti and mix well.  Serve with additional parmessan cheese if desired.
