Honey Spicy Veggies + Stir Fry

This is an easy way to get more veggies into your meal!

Ingredients

  • 2 tbsp butter
  • 1 1/2 tbsp honey
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp chili power
  • 1/2 tsp paprika
  • your choice of veggies such as butternut squash, roasted beets, bok choy, spinach, leeks, mushrooms, cauliflower, broccoli, brussel sprouts.  Cut, slice, cube the veggies as you like.
  • cooked chicken cubed, or frozen cooked shrimp

Directions

  • In a large frying pan, melt the butter over medium heat.  When melted add the honey.  Mix well and it will foam.
  • Add the spices and mix well. Taste and adjust spices to your liking.
  • Add the veggies that need a longer cooking time (squash, leeks, mushrooms, cauliflower, brocoli, brussel sprouts) and mix well.  Cook until almost tender…about 10 minutes
  • Add the cooked chicked or frozen cooked shrimp and mix.  Cook 3 – 5 minutes until heated through.
  • Add the veggies that need little cooking time (bok choy, spinach, roasted beets) and mix well.
  • Serve as is or over rice.
