A super quick and delicious meal with homemade fish sauce!
Ingredients
For the lemongrass beef bowl:
- 1 stalk lemongrass, chopped
- Stir fry beef, or steak cut into thin strips for frying
- 1 – 2 tbsp cornstarch
- 1 package vermicelli noodles
- Carrots, sliced into matchsticks (or shaved)
- Cucumber, sliced into matchsticks
- Handful of peanuts, roughly chopped
- Sliced green onions
- A few leaves of mint and basil for garnish
For the sauce:
- 1 cup white sugar
- 1 cup fish sauce
- 2.5 cups boiled water
- 3 tbsp garlic (about an entire head)
- 3 tbsp fresh lime juice with the pulp
- 2 tbsp white vinegar
- 1 tbsp chili garlic paste (optional)
Directions
- For the homemade sauce, combine all the ingredients into a large bowl and mix until the sugar is dissolved. Makes a lot, but is good for 3-4 months in a sealed container in the fridge. Can be used for any noodle bowls or as a dipping sauce!
- Coat the beef strips in cornstarch, salt, and pepper. Set aside.
- Bring a pot of water to a boil for the vermicelli noodles. At the same time, heat oil in a saucepan for the beef.
- Add your beef strips and lemongrass into your pan and cook until browned.
- Add your vermicelli noodles to the boiling water and cook according to the package (about 5-10 minutes). Drain.
- Place some noodles into a bowl and top with the veggies, sautéed beef, mint, basil, chopped peanuts, and green onions. Pour over some homemade fish sauce and enjoy!
