Lemongrass Beef Vermicelli Bowl

A super quick and delicious meal with homemade fish sauce!

Ingredients

For the lemongrass beef bowl:

  • 1 stalk lemongrass, chopped
  • Stir fry beef, or steak cut into thin strips for frying
  • 1 – 2 tbsp cornstarch
  • 1 package vermicelli noodles
  • Carrots, sliced into matchsticks (or shaved)
  • Cucumber, sliced into matchsticks
  • Handful of peanuts, roughly chopped
  • Sliced green onions
  • A few leaves of mint and basil for garnish

For the sauce:

  • 1 cup white sugar
  • 1 cup fish sauce
  • 2.5 cups boiled water
  • 3 tbsp garlic (about an entire head)
  • 3 tbsp fresh lime juice with the pulp
  • 2 tbsp white vinegar
  • 1 tbsp chili garlic paste (optional)

Directions

  • For the homemade sauce, combine all the ingredients into a large bowl and mix until the sugar is dissolved. Makes a lot, but is good for 3-4 months in a sealed container in the fridge. Can be used for any noodle bowls or as a dipping sauce!
  • Coat the beef strips in cornstarch, salt, and pepper. Set aside.
  • Bring a pot of water to a boil for the vermicelli noodles. At the same time, heat oil in a saucepan for the beef.
  • Add your beef strips and lemongrass into your pan and cook until browned.
  • Add your vermicelli noodles to the boiling water and cook according to the package (about 5-10 minutes). Drain.
  • Place some noodles into a bowl and top with the veggies, sautéed beef, mint, basil, chopped peanuts, and green onions. Pour over some homemade fish sauce and enjoy!
