Chili Con Queso


  • 1 lb Velveeta cheese
  • 1 1/4 cup light cream
  • 1 can (4 oz) chopped chilis
  • 1/4 cup green peppers, chopped finely
  • 4 tsp chopped pimento


  1. Cut cheese chunks. Melt with cream and chilies in a heavy saucepan.
  2. Pre-cook green pepper in microwave 2 minutes on high.
  3. Add cheese to mixture. Stir until melted.
  4. Make well ahead to blend flavours
  5. Serve hot with crackers or tortilla chips
