- 1 lb Velveeta cheese
- 1 1/4 cup light cream
- 1 can (4 oz) chopped chilis
- 1/4 cup green peppers, chopped finely
- 4 tsp chopped pimento
- Cut cheese chunks. Melt with cream and chilies in a heavy saucepan.
- Pre-cook green pepper in microwave 2 minutes on high.
- Add cheese to mixture. Stir until melted.
- Make well ahead to blend flavours
- Serve hot with crackers or tortilla chips
