Cranberry Banana Muffins

(20 to 25 minutes to 375F)

Ingredients

  • 1 1/3 cup flour
  • 3/4 cup sugar
  • 1/2 cup oats
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cup mashed bananas (or grated apples)
  • 1/2 cup butter, melted
  • 1 cup cranberries, frozen or fresh

Directions

  1. Preheat Oven to 375F
  2. Combine first 5 ingredients in a bowl and mix well.
  3. Beat egg, banana and melted butter together.
  4. Add to dry ingredients stirring just until moistened.
  5. Fold in cranberries.
  6. Fill muffin tins until almost full.
  7. Bake for 20 to 25 minutes.
