Ingredients
- 3 c grated zucchini
- 4 eggs
- 3 cup flour
- 3 cup sugar
- 2 tsp baking powder
- 1 cup oil
- 1 tsp baking soda
- 1 tsp almond extract
- 1 tsp salt
- 1 cup ground almonds
Glaze
- 4 eggs
- 1 1/2 c icing sugar
- 3 cup sugar
- 2 tbsp milk
- 1 cup oil
- 1/4 tsp almond extract
- 1 tsp almond extract
- 1/4 cup toasted slivered almonds
Directions
- Preheat Oven to 350F
- Beat eggs until thick. Add sugar gradually mixing well. Add oil, extracts. Add in dry ingredients and mix thoroughly.
- Mix in zucchini and nuts.
- Pour into pan and bake for 1 hour.
- Turn upside down to cool.
- Remove from pan and drizzle glaze over top. Decorate with nuts.
- Freezes well.
