Almond Zucchini Cake

(1 hour at 350F)

Ingredients

  • 3 c grated zucchini
  • 4 eggs
  • 3 cup flour
  • 3 cup sugar
  • 2 tsp baking powder
  • 1 cup oil
  • 1 tsp baking soda
  • 1 tsp almond extract
  • 1 tsp salt
  • 1 cup ground almonds

Glaze

  • 4 eggs
  • 1 1/2 c icing sugar
  • 3 cup sugar
  • 2 tbsp milk
  • 1 cup oil
  • 1/4 tsp almond extract
  • 1 tsp almond extract
  • 1/4 cup toasted slivered almonds

Directions

  1. Preheat Oven to 350F
  2. Beat eggs until thick. Add sugar gradually mixing well. Add oil, extracts. Add in dry ingredients and mix thoroughly.
  3. Mix in zucchini and nuts.
  4. Pour into pan and bake for 1 hour.
  5. Turn upside down to cool.
  6. Remove from pan and drizzle glaze over top. Decorate with nuts.
  7. Freezes well.
