- 3/4 cup butter
- 1 lb mushrooms
- 1 cup onions, chopped
- 1 lb pot barley
- 4-5 cups chicken broth
- 1 tsp salt
Sauté first 4 ingredients till golden brown and season with salt & pepper.
Turn into large casserole and add 2 c broth.
Cover and bake 30 min.
Add remaining broth and bake 1 hr.
Uncover and bake 30 min or until all liquid is absorbed.
