Makes 6 Servings
Ingredients
- Grease 8″x8″ pan
- 1/2 cup crushed vanilla crumbs
- 1/2 tsp almond extract
- 1 cup whipping cream
- 1/2 cup soft butter
- 1/4 tsp. vanilla
- 1/2 cup icing sugar
- 3 small jars of strained apricot baby food
- 1 egg
Directions
- Grease 8″x8″ pan.
- Sprinkle with half the crumbs.
- Beat butter and sugar together.
- Add egg and flavourings and beat well.
- Spread over crumbs with back of wet spoon.
- Cover with apricots.
- Whip cream till stiff and sweeten to taste.
- Swirl over top if apricots and sprinkle with remaining crumbs.
- Chill 4 hours.
- Freezes well.
