Apricot Smooch

Makes 6 Servings

Ingredients

  • Grease 8″x8″ pan
  • 1/2 cup crushed vanilla crumbs
  • 1/2 tsp almond extract
  • 1 cup whipping cream
  • 1/2 cup soft butter
  • 1/4 tsp. vanilla
  • 1/2 cup icing sugar
  • 3 small jars of strained apricot baby food
  • 1 egg

Directions

  1. Grease 8″x8″ pan.
  2. Sprinkle with half the crumbs.
  3. Beat butter and sugar together.
  4. Add egg and flavourings and beat well.
  5. Spread over crumbs with back of wet spoon.
  6. Cover with apricots.
  7. Whip cream till stiff and sweeten to taste.
  8. Swirl over top if apricots and sprinkle with remaining crumbs.
  9. Chill 4 hours.
  10. Freezes well.
