These are stuffed full of fun!
Ingredients
- 2 lb lean ground beef
- 1/2 c. onion, chopped
- 1 can corn, drained
- 1 medium carrot, grated
- 1/2 c. pinto beans
- 1/2 c. black beans
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp sugar
- 1/2 tsp garlic powder
- 3/4 c. ketchup
- 1/2 c. grated cheddar cheese
- 3 bell peppers, halved and cleaned (make it colourful!)
Directions
- Preheat Oven to 375F.
- In a large frying pan, fry onion in a small amount of oil until tender. Add beef and cook through.
- Add remaining ingredients and mix thoroughly, but should remain slightly moist.
- Spoon mixture into peppers and top with cheese.
- Bake for 30 minutes until golden brown.
