Thai Coconut Sauce for Roasted Veggies

This simple sauce takes roasted vegetables up a notch!


  • 1 tsp of Tumeric, fresh is best, peeled
  • 3 tsp of ginger, fresh is best, peeled
  • 1 clove of garlic
  • 1tbsp Tamari ( a wheat free soy sauce)
  • 1 lime, juiced
  • 1/3 c cashews
  • 1/2 c coconut milk, shaken


  • Put all ingredients into blender and blend until smooth
  • Pour over roasted veggies, especially yams, cauliflower, asparagus, peppers etc.
  • Yum!
