This is awesome for a crowd as you can be socializing while it does its thing in the oven!
- 8 – 14 lbs boneless beef (rolled)
- Sprinkle liberally with pepper, sea salt, and garlic powder
- Place on a rack in a roasting pan or on a cookie sheet
- Roast for 15 – 20 minutes at 500F.
- Turn oven down to its lowest setting (100 – 140F) and leave for 8 hours.
- NO PEEKING…tape the oven door closed!!
- Before serving, turn the oven up to 350F for 20 minutes.
