Mediterranean Salad with Tahinni Dressing

Something a little different with the mango addition!

Ingredients

  • SALAD (adjust quantities as needed – these measurements serve 8)
  • 1 english cucumber chopped into small pieces (1/4″)
  • 2 containers of grape tomatoes (1 red, 1 variegated is great), chopped in 1/2
  • 1/2 c – 3/4 c chopped red onion
  • 1 c chopped fresh parsley
  • 1 c+ frozen mango chunks, chopped into 1/2″ pieces
  • 1 can chick peas, drained and rinsed (can substitute 1 c cooked lentils)
  • DRESSING
  • 2 tbsp olive oil
  • 1 tbsp water
  • 3 tbsp tahinni (ground sesame seeds….jar found in organic section)
  • 2 cloves of garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp rice vinegar
  • 1 tsp liquid honey
  • salt / pepper to taste

Directions

  • Chop the mango while is is mostly frozen
  • Put the dressing on the salad a couple of hours before serving
  • Keep salad chilled.
  • Enjoy!
