Something a little different with the mango addition!
Ingredients
- SALAD (adjust quantities as needed – these measurements serve 8)
- 1 english cucumber chopped into small pieces (1/4″)
- 2 containers of grape tomatoes (1 red, 1 variegated is great), chopped in 1/2
- 1/2 c – 3/4 c chopped red onion
- 1 c chopped fresh parsley
- 1 c+ frozen mango chunks, chopped into 1/2″ pieces
- 1 can chick peas, drained and rinsed (can substitute 1 c cooked lentils)
- DRESSING
- 2 tbsp olive oil
- 1 tbsp water
- 3 tbsp tahinni (ground sesame seeds….jar found in organic section)
- 2 cloves of garlic, minced
- 2 tbsp lemon juice
- 2 tbsp rice vinegar
- 1 tsp liquid honey
- salt / pepper to taste
Directions
- Chop the mango while is is mostly frozen
- Put the dressing on the salad a couple of hours before serving
- Keep salad chilled.
