Tabbouleh Salad

A traditional Lebanese recipe!


  • 2/3 cup extra virgin olive oil
  • 6 tablespoons lemon juice
  • 1/2 cup fine bulgar
  • 6 bunches fresh parsley, finely chopped
  • 4 firm tomatoes, finely chopped
  • 4 green onions, chopped
  • 1/2 cup fresh mint leave, chopped (optional)
  • 1/2 teaspoon salt and pepper


  • Whisk the olive oil, lemon juice, salt and pepper in a large bowl until well combined. Stir in the bulgar and let the grains soak up the dressing until they are soft and plump – about 2-3 hours
  • Add chopped parsley, tomatoes, green onions, and mint to the bowl, but don’t mix yet. Let stand for another 30 minutes or so.
  • When the bulgar is plump and ready to eat, mix everything together until well combined and serve!
