Chicken Tetrazzini


  • 1/2 cup onion, chopped
  • 1 can cream of mushroom, or cream of chicken, or cheddar cheese soup
  • 2/3 cup light cream or milk
  • 1/3 cup or more of grated cheddar cheese
  • 2 chicken breasts, cooked and shredded (can sub turkey or tuna)
  • 1 tbsp minced parsley
  • 6oz broad noodles, cooked and drained


  • Heat oven to 375F
  • In a large saucepan, fry the onion in a small amount of oil until tender.
  • Add soup, milk, and cheese and stir until melted together.
  • Add the cooked and shredded chicken and mix until the chicken is fully coated with the sauce.
  • Pour into a greased casserole dish and sprinkle with additional cheese. Bake for 30 minutes. Top with fresh parsley and serve hot!
