Chicken Burgers

Very tasty!  I make them oblong to fit into flour tortillas.  Serve with spicy pepper hummus, sliced cherry tomatoes, shredded lettuce, tzatiki, shredded cheese,  and salsa.  Roll them up and enjoy!

Chicken, Zucchini and Fresh Corn Burgers Recipe

Ingredients

  • 1 lb. ground chicken or turkey (not previously frozen)
  • 1/2 c panko bread crumbs or cracker crumbs (or more as needed)
  • 1/2 c or more grated zucchini or squash, water squeezed out
  • 1 lg egg
  • 3 cloves garlic, minced
  • 1/2 can corn nibblets, drained OR 1/2 can white kidney beans, drained
  • 3 green onions sliced thinly
  • 1/2 c bell pepper finely chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp kosher salt
  • 1tsp ground pepper or pepper medley
  • 1 tsp minced onion
  • 1 tsp onion powder
  • 1 tsp celery salt

Directions

  • Preheat oven to 400F
  • In a large bowl combine all ingredients and mix well.  If the mixture seems too wet, add more panko crumbs. Form into patties.  Put parchment paper between the patties. Put the patties into a zip lock and freeze them.  They are best cooked from frozen as they are fragile.
  • Heat a large frying pan to medium heat.  Add oil to cover the bottom of the pan.
  • Sear the patties for about 5 minutes on each side. Remove and place on baking sheet.
  • Place in the oven for 7-10 minutes or until the burger centers reach 170F.
  • Place them in flour tortillas, add the condiments and enjoy.
