Chicken Burgers

Very tasty!  You can add more corriander / cumin and maybe some chili flakes if you want it spicier.  I make them oblong to fit into flour tortillas.  Serve with hummus, sliced cherry tomatoes, shredded lettuce, and tzaziki.  Roll them up and enjoy!


  • 1 lb ground chicken or turkey
  • 1/2 c panko bread crumbs
  • 1/2 c or more grated zucchini, water squeezed out
  • 1 lg egg
  • 3 cloves garlic, minced
  • 1/2 can corn niblets, drained
  • 3 green onions sliced thinly
  • 1/2 c bell pepper finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 2 tbsp chopped cilantro (optional)


  • Preheat oven to 425F
  • In a large bowl combine all ingredients and mix well.  If the mixture seems too wet, add more panko crumbs. Form into patties.  I like to put them in the fridge / freezer for 20 minutes to firm up.
  • Heat a large frying pan to medium heat.  Add oil to cover the bottom of the pan.
  • Sear the patties for about 2 minutes on each side. Remove and place on baking sheet.
  • Place in the oven for 7-10 minutes or until the burger centers reach 170F.
  • Place them in flour tortillas, add the condiments and enjoy.
