Very tasty! You can add more coriander / cumin and maybe some chili flakes if you want it spicier. I make them oblong to fit into flour tortillas. Serve with hummus, sliced cherry tomatoes, shredded lettuce, and tzatziki. Roll them up and enjoy!
Ingredients
- 1 lb. ground chicken or turkey
- 1/2 c panko bread crumbs
- 1/2 c or more grated zucchini, water squeezed out
- 1 lg egg
- 3 cloves garlic, minced
- 1/2 can corn nibbles, drained
- 3 green onions sliced thinly
- 1/2 c bell pepper finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- 1/2 tsp ground pepper
- 2 tbsp chopped cilantro (optional)
Directions
- Preheat oven to 425F
- In a large bowl combine all ingredients and mix well. If the mixture seems too wet, add more panko crumbs. Form into patties. I like to put them in the fridge / freezer for 20 minutes to firm up.
- Heat a large frying pan to medium heat. Add oil to cover the bottom of the pan.
- Sear the patties for about 2 minutes on each side. Remove and place on baking sheet.
- Place in the oven for 7-10 minutes or until the burger centers reach 170F.
- Place them in flour tortillas, add the condiments and enjoy.
