Chicken Burgers

Very tasty!  You can add more coriander / cumin and maybe some chili flakes if you want it spicier.  I make them oblong to fit into flour tortillas.  Serve with hummus, sliced cherry tomatoes, shredded lettuce, and tzatziki.  Roll them up and enjoy!

Chicken, Zucchini and Fresh Corn Burgers Recipe

Ingredients

  • 1 lb. ground chicken or turkey
  • 1/2 c panko bread crumbs
  • 1/2 c or more grated zucchini, water squeezed out
  • 1 lg egg
  • 3 cloves garlic, minced
  • 1/2 can corn nibbles, drained
  • 3 green onions sliced thinly
  • 1/2 c bell pepper finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 2 tbsp chopped cilantro (optional)

Directions

  • Preheat oven to 425F
  • In a large bowl combine all ingredients and mix well.  If the mixture seems too wet, add more panko crumbs. Form into patties.  I like to put them in the fridge / freezer for 20 minutes to firm up.
  • Heat a large frying pan to medium heat.  Add oil to cover the bottom of the pan.
  • Sear the patties for about 2 minutes on each side. Remove and place on baking sheet.
  • Place in the oven for 7-10 minutes or until the burger centers reach 170F.
  • Place them in flour tortillas, add the condiments and enjoy.
