Carrot Cake Muffins

Carrot cake in small form.  Can make with or without cream cheese icing.  Great snack and travel well!!

Ingredients

  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 veggie oil or melted butter
  • 1/2 c brown sugar
  • 1/4 c granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 – 2 c finely grated carrots
  • 1/2 c chopped pecans
  • 1/4 c+ of raisins

Directions

  • Heat oven to 350 degrees
  • Put liners in muffin pan.  Makes 1 dozen. I mix by hand.
  • Mix dry ingredients in medium bowl.
  • Mix remaining ingredients in separate bowl.
  • Add wet ingredients to dry ingredients and mix well.
  • Add spoonfulls to muffin cups.
  • Bake for 18-20 minutes.
  • Cool and refrigerate or freeze.
