Carrot cake in small form. Can make with or without cream cheese icing. Great snack and travel well!!
Ingredients
- 1 1/2 c flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1/2 veggie oil or melted butter
- 1/2 c brown sugar
- 1/4 c granulated sugar
- 1 tsp vanilla extract
- 1 1/2 – 2 c finely grated carrots
- 1/2 c chopped pecans
- 1/4 c+ of raisins
Directions
- Heat oven to 350 degrees
- Put liners in muffin pan. Makes 1 dozen. I mix by hand.
- Mix dry ingredients in medium bowl.
- Mix remaining ingredients in separate bowl.
- Add wet ingredients to dry ingredients and mix well.
- Add spoonfulls to muffin cups.
- Bake for 18-20 minutes.
- Cool and refrigerate or freeze.
