A great use of homemade mincemeat!
Ingredients
- 1 1/4 c flour
- 1/2 c cold butter
- 1/4 c packed brown sugar
- 1 tsp baking powder
- 2 eggs
- 1 c white sugar
- 1/3 c chopped walnuts
- 2 tbsp melted butter
- 1 tbsp milk
- 1 tsp vanilla extract
- 2 c (500 ml jar) mincemeat
Directions
- Heat oven to 350 F
- Place flour, butter, brown sugar, and baking powder in food processor. Process until butter is finely chopped.
- Separate 1 egg, reserving egg white. Add egg yolk to food processor and process until blended.
- Pat mixture into bottom of 8″x8″ baking dish. Bake for 10 minutes and remove.
- Beat together 1 egg and reserved egg white until frothy. Stir in sugar, nuts, melted butter, milk and vanilla.
- Spread mincemeat over crust.
- Pour egg mixture over mincemeat.
- Bake for 25 minutes or until lightly browned.
- Cool and cut into squares.
