These cookies are barely sweet and provide great energy on active days. I prefer these instead of granola bars. You can make them sweeter if you prefer by adding some honey.
Ingredients
- WET INGREDIENTS
- 1/2 c butter, soft
- 3 eggs
- 2 large or 3 small bananas mashed
- 1/2 c unsweetened apple sauce
- 3/4 c brown sugar
- 3 tsp cinnamon
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp salt
- 1/4 c honey (optional)
- DRY INGREDIENTS
- 3 c rolled oats
- 1 c all purpose flour
- 1/2 c hemp hearts
- 1/2 c chia seeds
- 1/2 c flax seeds
- 1/2 c almond flour (or all purpose)
- 1/2 c unsweetened medium coconut
- 1/2 c pumpkin seeds (optional)
- 1 1/4 c raisins, rinced and drained (OR 1 c raisins and 1/4 c chocolate chips)
Directions
- Heat oven to 350
- Line a cookie sheet with parchment paper
- Mix all the wet ingredients in food processor, blender, or mixer.
- Mix all the dry ingredients in a large bowl
- Add the wet mixture to the dry mixture and combine until it just holds together. You can add a bit more applesauce if it seems too dry.
- Scoop large tablespoons of mixture onto parchment paper and press down lightly. Cookies will not spread on their own.
- Bake 12- 15 minutes.
- Best kept in a sealed container in the fridge.
