Healthy Cookies

These cookies are barely sweet and provide great energy on active days.  I prefer these instead of granola bars. You can make them sweeter if you prefer by adding some honey.

Ingredients

  • WET INGREDIENTS
  • 1/2 c butter, soft
  • 3 eggs
  • 2 large or 3 small bananas mashed
  • 1/2 c unsweetened apple sauce
  • 3/4 c brown sugar
  • 3 tsp cinnamon
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 c honey (optional)
  • DRY INGREDIENTS
  • 3 c rolled oats
  • 1 c all purpose flour
  • 1/2 c hemp hearts
  • 1/2 c chia seeds
  • 1/2 c flax seeds
  • 1/2 c almond flour (or all purpose)
  • 1/2 c unsweetened medium coconut
  • 1/2 c pumpkin seeds (optional)
  • 1 1/4 c raisins, rinced and drained (OR 1 c raisins and 1/4 c chocolate chips)

Directions

  • Heat oven to 350
  • Line a cookie sheet with parchment paper
  • Mix all the wet ingredients in food processor, blender, or mixer.
  • Mix all the dry ingredients in a large bowl
  • Add the wet mixture to the dry mixture and combine until it just holds together.  You can add a bit more applesauce if it seems too dry.
  • Scoop large tablespoons of mixture onto parchment paper and press down lightly.   Cookies will not spread on their own.
  • Bake 12- 15 minutes.
  • Best kept in a sealed container in the fridge.
